Next Jim carefully fills the pear jars with sugar syrup almost (about 3/16") to the top -- the large black pot at the right holds boiling water in which they will be processed

The pear jars are then sealed with a flat top with a rubber sear around the outside and special outside screws to hold them tight against the jars
